Numerical Recipes for sure is the bible of numerical algorithms.
Even though it is not easy to read, I don't know any other book that covers such a wide range of numerical topics. Maybe a bit too "heavy" for beginners.

Digital Signal Processing by Steven W. Smith is a book that is pure fun to read. The title says it all! Straight forward into the subject with lots of examples.
Too bad that the code-snippets are in BASIC.

Signalanalyse und -erkennung by Rüdiger Hoffmann covers the theory of signal processing correctly and is very comprehensive. Unfortunately it is not very practice-oriented and to turn the techniques into software is definetly not the goal. But despite that it is a good choice when it comes to learn the basics!

Sampling and filtering of signals along with their representation in the time- and frequency-domain are presented very detailed and comprehensive. To my opinion it is not very practice-oriented. The american edition is still available.
