Signalanalyse und -erkennung by Rüdiger Hoffmann covers the theory of signal processing
correctly and is very comprehensive. Unfortunately it is not very practice-oriented and to
turn the techniques into software is definetly not the goal. But despite that it is a
good choice when it comes to learn the basics!

Sampling and filtering of signals along with their representation in the time- and frequency-domain
are presented very detailed and comprehensive. To my opinion it is not very practice-oriented.
The american edition is still available.
